bake at a low temp for long time vs. bake at a high temp for short time?


If you bake a cake at a high temperature for a short time VS baking it at a lower temperature for a longer time, what will the difference be? What happens to the cake?

Oh and also, does quantity affect the time and temperature that you bake it at?

I want to bake 6 cupcakes, but I don't know if I should stick with the usual 360 degrees for 15-20 minutes or change it...

Short version: Leave the thermostat alone. Cupcakes won't be much affected by a change in temperature, but other cakes will. The effects of temperature depend on what's being made. I'll discuss cakes here.

Higher temperatures mean more browning, a tunnel-y crumb, and the possibility of falling--the leavening gases might expand too rapidly, but the heat will not have set the protein (egg and gluten) structure of the cake. The expanded gases leave the batter, and your cake falls and you'll get a tough, pancake-y result. If your cake doesn't crater, a hot oven could mean that your cake will probably have a dome on it, which is troublesome if you're trying to stack layers.

A too cool oven will produce a dry, crumbly cake, one with pale color, and perhaps some surface stickiness. The crumb of the cake could be so crumbly that the cake falls apart when sliced or handled.

If you are making a large cake--over 10" in diameter in its smallest dimension, you might want to lower the oven temp by 25 deg F. A thick cake may need to be covered with foil to prevent over-browning.

Cupcakes will have a domed top and a crumbly texture--more like muffins--if baked too hot. Cupcakes, believe it or not, should have smooth tops, nearly flush with the tin or paper muffin cup. If you want domes, make them with lots of icing.

If by quantity you mean the number of muffins, any number up to a dozen won't require any adjustments. More than one pan of muffins and you may want to rotate the pans left-to-right and 180 degrees after 10 minutes.

Why Would a Business Want to Use a Temp Agency

Companies may wonder why they should hire an hr consulting firm, i.e., a temp agency, to locate quality employees.

In a highly competitive corporate world, knowledgeable help can mean the difference between a constant influx of clients and bankruptcy. Statistically speaking, every disgruntled customer that leaves your establishment equals seven or more people who won't give you a chance based on word of mouth.

That is why it is very important to locate individuals who are not only skilled technically but have a great work ethic and understand the value of supplying quality service.

When a company endeavors to locate these people themselves as opposed to hiring a human resource consulting firm, they have a hard time finding quality workers. The reason for this is multifaceted, but can often be attributed to.

- Lack of time - when a company looks for "grade A" assistance, it is often because they needed them yesterday. This can make them hire on someone who may have certain skills but could be lacking in other valuable traits, like interpersonal skills.

- Inexperience - although you may realize what you want, you may not have the ability to acquire it. They usually have a team of specialized recruiters who weed out potential employees by a highly stylize criteria. By having a larger pool of candidates and a selective process, you are more assured to find a qualified match for your job.

Temp agencies can also provide:

- Greater productivity - because you are not taking time out of your valuable day to interview all potential hires, you can get more work done. This increased productivity will greatly aid your business growth.

- Employees who are tried and tested - when businesses try to hire employees they have no real way of seeing how well the applicant truly performs in a work environment. Recruiting agencies do, with tailored skill assessments, like WMP or ten key punch tests for data entry that can reveal a workers strengths and weaknesses. They also offer training facilities for applicants to improve their abilities and learn new skills that will help them in the job market.

- Employee resource - No matter how organized an office is, if someone leaves or get sick, it can disrupt the office routine. Temp agencies can replace sick individuals, those on maternity leave or who don't work out. You can also hire on temps for seasonal work, as many organizations see increased workloads around Holidays or summer months depending on the nature of their business.

It can end up costing you more in the end to not go with an established recruiting agency. If you start weighing the pros and cons of looking into human resource consulting, remind yourself that the time you spend working as opposed to worrying over the exhaustive hiring process is more time spent building your business up. When one considers the above facts, then the benefits of hiring workers through a temp agency is worth its weight in gold.

    Well, the steel wasn’t reduced to dust, the concrete was. And we didn’t find even *one* of the 4 in the WTC towers crash, or either or the 2 from the plane that allegedly hit the Pentagon. Flight Data Recorders: FDRs are usually located in the rear of the aircraft, typically in the tail. In this position, the entire front of the aircraft is expected to act as a “crush zone” to reduce the shock that reaches the recorder. Also, modern FDRs are typically double wrapped, in strong corrosion-resistant stainless steel or titanium, with high-temperature insulation inside. These are their specs: FLIGHT DATA RECORDER Time recorded: 25 hour continuous Number of parameters: 5 – 300+ Impact tolerance: 3400Gs /6.5ms Fire resistance: 1100 degC/30 min Water pressure resistance: submerged 20,000 ft Underwater locator beacon: 37.5 KHz Battery: 6yr shelf life 30 day operation COCKPIT VOICE RECORDER Time recorded: 30 min continuous, 2 hours for solid state digital units Number of channels: 4 Impact tolerance: 3400 Gs /6.5ms Fire resistance: 1100 deg C /30 min Water pressure resistance: submerged 20,000 ft Underwater locator beacon: 37.5 KHz Battery: 6yr shelf life 30 day operation “Although investigators look for an entire black box, sometimes the only parts of the device that survive are the recorder’s crash-survivable memory units (CSMU). the csmu is almost indestructible. It is housed within a stainless-steel shell that contains titanium or aluminum and a high-temperature insulation of dry silica material.” “It is designed to withstand heat of up to 2,000 degrees fahrenheit for one hour, salt water for at least 30 days, immersion in a variety of liquids such as jet fuel and lubricants, and an impact of 3,400 G’s. By comparison, astronauts are typically exposed to up to six Gs during a shuttle takeoff.” [ABCNews] Taking all the *vast* damage that were dealt to these pieces of equipment, how does a passport survive? BTW, it’s made of *paper*. The boxes are built to survive much, MUCH more abuse than they were actually subjected to. At the very least, had a A/C really crashed into the pentagon, there would have been more debris, we would have found the engines of the aircraft (or at least the titanium pieces, since the melting point of titanium is more than 3000 °F. Condsider this: There are accounts contradicting the official account of the black boxes. Two men who worked in the cleanup operation at Ground Zero claim that they helped authorities find three of the four black boxes in October of 2001. One of the workers, New York City firefighter Nicholas DeMasi, has self-published a book with other Ground Zero workers in which he describes the recovery of the devices. Why would he lie? What does he have to gain? The basement of 4 World Trade Center housed vaults used to store gold and silver bullion. Published articles about precious metals recovered from the World Trade Center ruins in the aftermath of the attack mention less than $300 million worth of gold. All such reports appear to refer to a removal operation conducted in late October of 2001. On Nov. 1, Mayor Rudolph Giuliani announced that “more than $230 million” worth of gold and silver bars that had been stored in a bomb-proof vault had been recovered. Why was there a difference in the amount? Iron melts at 1538ºC, so the presence of these numerous iron-rich spheres implies a very high temperature. Too hot in fact for the fires in the WTC buildings since jet fuel (kerosene), paper and wood furniture ­ and other office materials ­ cannot reach the temperatures needed to melt iron or steel. So how exactly were the metal supports melted, if this is the case? “As the floors collapsed, this left tall freestanding portions of the exterior wall and possibly central core columns. As the unsupported height of these freestanding exterior wall elements increased, they buckled at the bolted column splice connections, and also collapsed.” -FEMA’s Report I’ve watched the video of the collapse. It didn’t happen at all like that. It came straight down, floor by floor. This shows photos of aircraft debris that survived much worse than the black boxes survived, yet came out relatively ok. But what do I know? I only work for the government.
